This Easy Gravy Without Drippings is rich, smooth, and packed with flavor—perfect for mashed potatoes, turkey, chicken, or biscuits! Made with butter, broth, and simple seasonings, this 5-minute homemade gravy is the perfect quick and foolproof recipe when you don’t have pan drippings.

Ingredients

Scale
  • 4 tbsp unsalted butter
  • ¼ cup all-purpose flour (for thickening!)
  • 2 cups chicken, turkey, or beef broth (low-sodium recommended!)
  • ½ tsp garlic powder (optional, for depth!)
  • ½ tsp onion powder (adds extra flavor!)
  • ½ tsp dried thyme or sage (optional, for a herby touch!)
  • Salt & black pepper, to taste
  • 1 tsp Worcestershire sauce (adds umami, optional!)

For a Creamy Version:

  • ¼ cup heavy cream (for a richer, creamier texture!)

Instructions

Step 1: Make the Roux

  1. In a medium saucepan, melt butter over medium heat.
  2. Add flour and whisk continuously for 1-2 minutes, until it turns light golden brown. (This removes the raw flour taste!)

Step 2: Add the Broth & Seasonings

  1. Slowly pour in broth, whisking constantly to prevent lumps.
  2. Stir in garlic powder, onion powder, thyme/sage, Worcestershire sauce, salt, and pepper.

Step 3: Simmer & Thicken

  1. Bring to a gentle simmer, whisking frequently.
  2. Cook for 3-5 minutes, until the gravy thickens to your desired consistency.
  3. If using, stir in heavy cream for a richer gravy.

Step 4: Serve & Enjoy!

  1. Taste and adjust seasoning as needed.
  2. Serve warm over mashed potatoes, turkey, biscuits, or roasted veggies!

Serving Suggestions

  • With Mashed Potatoes: Classic combo!
  • Over Roasted Meat: Perfect for chicken, turkey, or beef.
  • With Biscuits: Use as a buttery dipping sauce!

Notes

  • Want it darker? Cook the roux longer (3-4 minutes) for a deeper flavor.
  • Gluten-Free? Use cornstarch instead of flour (mix 2 tbsp cornstarch with 2 tbsp cold water, then add to simmering broth).
  • Vegetarian? Use vegetable broth instead of meat broth.
  • Too thick? Add more broth. Too thin? Simmer longer.
