Ground Turkey and Rice Soup is a hearty, nutritious, and comforting dish that’s perfect for chilly days or when you need a quick and easy one-pot meal. Packed with lean turkey, tender rice, and flavorful vegetables, this soup is both satisfying and healthy.

Ingredients

  • 1 lb ground turkey
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth (or turkey broth)
  • 1 (14.5 oz) can diced tomatoes (optional)
  • 1/2 cup white or brown rice
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt & black pepper, to taste
  • 1 cup spinach or kale, chopped (optional)
  • 1 tbsp lemon juice (for freshness)

Instructions

  1. Cook the Turkey:

    • Heat olive oil in a large pot over medium heat.
    • Add ground turkey and cook until browned, breaking it up as it cooks. Drain any excess fat.
  2. Sauté the Vegetables:

    • Add onion, carrots, and celery. Cook for 5 minutes until softened.
    • Stir in garlic and cook for 30 seconds until fragrant.
  3. Add Broth & Rice:

    • Pour in the broth and diced tomatoes (if using).
    • Stir in rice, thyme, oregano, paprika, salt, and pepper.
  4. Simmer Until Rice is Tender:

    • Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the rice is cooked.
  5. Final Touches:

    • Stir in spinach or kale (if using) and let wilt for 2 minutes.
    • Add lemon juice for brightness.
  6. Serve & Enjoy!

    • Ladle into bowls and serve warm.

Notes

Make It Low-Carb: Swap rice for cauliflower rice and add it in the last 5 minutes.
Extra Hearty: Stir in a can of white beans for added protein.
