Hamburger Soup is a hearty, flavorful, and comforting dish packed with ground beef, vegetables, and a rich broth. It’s an easy one-pot meal that’s perfect for chilly nights, meal prep, or when you need a satisfying dinner in a hurry. Serve it with crusty bread for a complete meal!

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 1 (8 oz) can tomato sauce
  • 1 medium potato, diced
  • 1 tsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 cup frozen or fresh green beans (or peas)

Instructions

  1. Cook the Beef:

    • In a large pot over medium heat, brown the ground beef until fully cooked.
    • Drain excess grease if needed.
  2. Sauté the Vegetables:

    • Add onions, carrots, and celery to the pot. Sauté for 3-4 minutes until softened.
    • Stir in garlic and cook for another 30 seconds.
  3. Add Broth & Seasonings:

    • Pour in beef broth, diced tomatoes, tomato sauce, and Worcestershire sauce.
    • Add potatoes, Italian seasoning, salt, pepper, and smoked paprika.
  4. Simmer:

    • Bring to a boil, then reduce heat and simmer for 20 minutes, until potatoes are tender.
  5. Add Green Beans (or Peas):

    • Stir in green beans (or peas) and cook for another 5 minutes.
  6. Serve & Enjoy!

    • Ladle into bowls and serve warm with crusty bread.


Notes

Make It Low-Carb: Swap potatoes for cauliflower florets.
Slow Cooker Option: Cook on low for 6-8 hours or high for 3-4 hours.
Spice It Up: Add red pepper flakes or hot sauce for heat.
Storage: Store in the fridge for 4 days or freeze for up to 3 months.
