This Homemade Mexican Pizza is a crispy, cheesy, and flavorful dish inspired by the Taco Bell classic! Made with crispy tortillas, seasoned ground beef, refried beans, melty cheese, and fresh toppings, this easy meal is perfect for weeknights or game nights.

For the Pizza Base:

  • 4 large flour tortillas (or corn tortillas for a crunchier version)
  • 1 tbsp vegetable oil (for crisping the tortillas)

For the Beef Filling:

  • 1/2 lb ground beef
  • 1/2 packet (about 1 tbsp) taco seasoning
  • 1/4 cup water
  • 1/2 cup refried beans

For the Toppings:

  • 1/2 cup enchilada sauce (or taco sauce)
  • 1 cup shredded Mexican blend cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 2 tbsp chopped green onions
  • 1/4 cup sour cream (optional)
  • 1/4 cup guacamole (optional)

Instructions

Step 1: Crisp the Tortillas

  1. Preheat oven to 400°F (200°C).
  2. Lightly brush tortillas with vegetable oil and bake on a sheet for 5-7 minutes per side, flipping once, until golden and crispy. (Or, air-fry at 375°F for 4 minutes per side.)

Step 2: Cook the Beef

  1. In a skillet over medium heat, cook ground beef until browned. Drain excess grease.
  2. Stir in taco seasoning and water, cooking for 2-3 minutes until thickened.

Step 3: Assemble the Pizzas

  1. Spread refried beans evenly over two of the crispy tortillas.
  2. Top with the seasoned ground beef, then place another tortilla on top.
  3. Spread enchilada sauce over the top layer, then sprinkle with shredded cheese.

Step 4: Bake the Pizzas

  1. Place pizzas on a baking sheet and bake at 400°F for 5-7 minutes, or until cheese is melted.

Step 5: Add Toppings & Serve

  1. Remove from oven and top with diced tomatoes, black olives, green onions, and optional sour cream & guacamole.
  2. Slice into quarters and serve hot!

Notes

  • Want it spicy? Add jalapeños or drizzle with hot sauce.
  • Make it vegetarian: Swap beef for black beans or plant-based crumbles.
