These Honey Mustard Potatoes are crispy on the outside, tender on the inside, and coated in a delicious sweet and tangy glaze. Perfect as a side dish for chicken, steak, or even as a snack!

  • 2 lbs (900 g) baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon whole grain mustard (optional, for texture)
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or grease lightly.

2️⃣ Make the Honey Mustard Sauce

  • In a bowl, whisk together olive oil, melted butter, honey, Dijon mustard, whole grain mustard, garlic, salt, pepper, and smoked paprika.

3️⃣ Coat the Potatoes

  • Toss the halved potatoes in the honey mustard mixture until evenly coated.
  • Spread them in a single layer on the baking sheet.

4️⃣ Bake Until Crispy

  • Roast for 35-40 minutes, flipping halfway through, until golden brown and crispy on the edges.

5️⃣ Serve & Enjoy!

  • Sprinkle with fresh parsley and serve hot.
