For the Sandwiches:

  • 4 large flour tortillas (or spinach/tomato-flavored tortillas for extra color)
  • 8 oz (225 g) cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 8 slices deli meat (turkey, ham, or chicken)
  • 8 slices cheese (cheddar, Swiss, or provolone)
  • 1 cup baby spinach or lettuce leaves
  • 1 cup shredded carrots (or thinly sliced bell peppers)
  • 1/2 cup thinly sliced cucumbers

Instructions

1. Prepare the Cream Cheese Spread:

  • In a small bowl, mix the softened cream cheese, mayonnaise, Dijon mustard, garlic powder, and onion powder until smooth and well combined.

2. Lay Out the Tortillas:

  • Place the tortillas flat on a clean surface.
  • Spread a thin, even layer of the cream cheese mixture over each tortilla, making sure to cover the entire surface.

3. Layer the Fillings:

  • Place 2 slices of deli meat and 2 slices of cheese on each tortilla.
  • Add a layer of spinach or lettuce, shredded carrots, and sliced cucumbers.
  • Avoid overfilling to ensure the tortillas can be rolled tightly.

4. Roll the Tortillas:

  • Starting at one edge, tightly roll each tortilla into a log shape.
  • Wrap each roll in plastic wrap and refrigerate for at least 30 minutes to help them hold their shape.

5. Slice into Pinwheels:

  • Remove the plastic wrap and cut each roll into 1-inch thick slices using a sharp knife.
  • Arrange the pinwheels on a serving platter.

6. Serve:

  • Enjoy immediately or keep chilled until serving.
  • Garnish with fresh herbs or serve with dipping sauces if desired.
