These delicious puffs combine breakfast sausage, sharp cheddar cheese, and a hint of spice, all baked into fluffy, golden-brown bites. They are great for serving as an appetizer or for a brunch spread.

  • 1 lb (450 g) breakfast sausage (pork or chicken), cooked and crumbled
  • 2 cups shredded sharp cheddar cheese
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  • Preheat the Oven:
    Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

  • Cook the Sausage:
    In a skillet, cook the sausage over medium heat until fully browned. Break it into small crumbles. Drain excess fat and let it cool slightly.

  • Mix the Dry Ingredients:
    In a large bowl, combine the flour, baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

  • Add Cheese and Sausage:
    Stir in the shredded cheddar cheese and cooked sausage until they are well coated with the flour mixture.

  • Prepare the Wet Mixture:
    In a separate bowl, whisk together the eggs, milk, and melted butter.

  • Combine Everything:
    Pour the wet ingredients into the dry ingredients and mix until just combined. The mixture should be thick and slightly sticky.

  • Form the Puffs:
    Using a small cookie scoop or spoon, drop tablespoon-sized portions onto the prepared baking sheet, spacing them about 2 inches apart.

  • Bake:
    Bake for 15-20 minutes, or until the puffs are golden brown and cooked through.

  • Cool and Serve:
    Let the puffs cool slightly on a wire rack. Serve warm with your favorite dipping sauce or as is!

Notes

  • Make-Ahead: You can prepare the dough in advance and refrigerate it for up to 24 hours before baking.
  • Freezing: These puffs freeze well. After baking, let them cool completely, then freeze in an airtight container. Reheat in the oven at 350°F (175°C) until warm.
